When in Bologna, find an authentic trattoria serving tagliatelle al ragu, an iconic dish in the city. The Italians are adamant that a genuine recipe must be made with tagliatelle and not spaghetti, as the rich, substantial sauce requires a pasta of equal substance to stand up to it. The original recipe evolved in the 16th Century and was enjoyed by nobility, while today the dish is still revered as an important dish of the area and can be enjoyed with grated Grana Padano cheese on top.
When in Naples you must try the traditional Neapolitan style pizza to get a true flavour of the city.
